Healthy Recipes for the New Year

Keeping in line with your New Year resolutions, we would like to share some healthy recipes for you and your family to enjoy. The recipes are easy to follow, heart healthy, and delicious too! These meals are great for lunch or dinner and can be prepared ahead of time. Although it’s winter time, these dishes are very popular in the summer as well. Now is the time to start eating healthy year round!

Balsamic Green Bean Salad – This colorful and tasty dish complements any special meal or holiday potluck.


  • 2 pounds fresh green beans, trimmed and cut into 1-1/2 inch pieces
  • ¼ cup olive oil
  • 3 Tablespoons lemon juice
  • 3 Tablespoons balsamic vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground mustard
  • 1/8 teaspoon pepper
  • 1 large red onion, chopped
  • 4 cups cherry tomatoes, halved
  • 1 cup (4 ounces) crumbled feta cheese


Place green beans in a 6 quart stockpot; add water to cover. Bring to a boil. Cook, covered, 8-10 minutes or until crisp tender. Drain and immediately place into ice water. Drain and pat dry.
In a small bowl, whisk oil, lemon juice, vinegar, salt, garlic powder, mustard, and pepper. Drizzle over beans. Add onion; toss to coat. Refrigerate, covered, at least 1 hour. Just before serving, stir in tomatoes and cheese. Yield: 16 servings (3/4 cup each).

Grilled Fish Tacos with Tomato-Green Onion Relish – These delicious grilled fish tacos feature a homemade tomato-green onion relish that provides a fresh, spicy flavor.


  • 1 Tablespoon fresh lime juice
  • 2 teaspoons canola oil
  • 2 garlic cloves, minced
  • 2 teaspoons chili powder
  • ¾ teaspoon ground cumin
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1/8 teaspoon ground cayenne pepper
  • 1 pound firm white fish fillets
  • 8 (6-inch) fat free whole-wheat tortillas
  • Lime Wedges

Step 1: Combine first 8 ingredients in a bowl. Add fish; toss to coat. Cover and refrigerate 15 minutes.

Step 2: Wrap tortillas in foil. Place fish and tortillas on a grill rack coated with cooking spray. Grill fish, covered with grill lid, over medium-high heat (350 – 400 degrees) 3 minutes on each side or until fish flakes easily with a fork.

Step 3: Divide fish among tortillas; top with relish. Serve with lime wedges. Yield: 4 Servings

Tomato-Green Onion Relish ~ Combine ingredients in a medium bowl and stir well.

  • 2 cups chopped tomatoes
  • ¼ cup sliced green onions
  • 1 jalapeno chili, seeded and minced
  • ¼ cup chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • ¼ teaspoon salt

Pineapple Whip

This tasty treat is a crowd pleaser and so easy to make with only three ingredients:

  • 1 fresh pineapple, chopped
  • 1 cup almond milk
  • 1 tablespoon honey

Directions: Freeze the pineapple chunks overnight. Combine the frozen pineapple with the almond milk and honey. Blend until a frozen sorbet texture is achieved. Serve and enjoy!
